Nan's
Legendary Trifle
Every Saturday, Nan would
host the whole family over at
her house for a buffet, finished
off with her legendary trifle for
dessert. This simple, layered
classic has been passed down
through three generations,
from Nan, to my mum, and now
me and my children.

190g strawberry Swiss roll
135g strawberry jelly
1 tin mixed fruit cocktail
1 packet Bird’s Dream Topping
1 packet Bird’s instant custard powder
3 Cadbury Flake bars
METHOD
Start with the jelly – make it up according to the packet instructions,
using a cubed jelly rather than a powdered or crystal version.
Grab a glass bowl and line the bottom with slices of Swiss roll.

Next, drain the tin of mixed fruit cocktail and scatter it over the Swiss roll.
Pour the made-up jelly over the top, making sure it covers the fruit and
cake, then pop the bowl in the fridge until the jelly has completely set.
Once set, make the custard following packet instructions. Leave it to cool
slightly, but not completely, as you still want it to be easy to pour. Pour a
generous layer over the set jelly, giving the bowl a gentle nudge so the
custard settles evenly, then return to the fridge and leave to cool and set.
While you wait, whip the Dream Topping according to packet instructions,
then spread it evenly over the top.
Finish with a generous scattering of broken Flake.
Cover and chill in the fridge for a few hours, or overnight, then serve it up
chilled.
