Mum's
Bread Pudding
Mum was a wonderful feeder,
and bread pudding was her
way of making something
filling and delicious out of
leftover loaves. The recipe is
inexpensive to make, but packs
a lot of flavour and comfort.
It was a firm favourite among
our family of five.

1 loaf of bread
2 eggs
4 tbsp sugar
2 tsp mixed spice
226g mixed fruit
1/2 pint of milk
Brown or white sugar for the topping
Butter, for greasing

Pre-heat the oven to 180°C and grease a large oven-safe dish.
Warm the milk gently, then pour into a bowl, soaking the bread in the milk
until it turns nice and soft.
Beat the eggs, then mix in the sugar and mixed spice; once incorporated,
pour into the bread and milk mixture.
Stir through the mixed fruit and toss everything together until well
combined – don’t worry about being too precise with the fruit; if the mixture
needs a little more, just add it.
Tip everything into the greased dish and pop it in the oven for 35 minutes
When it’s nearly done, top with your choice of white or brown sugar, or a
brushing of orange marmalade, then pop back in until the top turns lovely
and crunchy.
